Soufflé is Served

Wimbledon is nearly upon us – we can hardly believe it either ­– and to celebrate, Raymond Blanc’s Brasserie Blancs and White Brasserie pubs are launching Champagne & Soufflé, an afternoon tea treat with a twist.

The eateries are famous for their light and fluffy soufflés – Raymond Blanc’s delicious Cheese Soufflé is so popular it has remained on the menu since Day One. Now, in the perfect marriage of French cuisine and British summertime, a brand-new menu of sweet soufflés has been created. Taking inspiration from Centre Court, the grandstand-worthy ‘Strawberries and Cream’ features a fluffy strawberry soufflé served with macerated strawberries, vanilla ice cream and a strawberry coulis. Meanwhile, ‘Apricot, Almond and Amaretto’ is a light-as-air soufflé of poached apricots, amaretto and marzipan, and is served with an apricot coulis, apricots and vanilla ice cream. The final soufflé on the menu is the Brasserie Blanc signature Pistachio, served with a rich chocolate ice cream. All are accompanied with a cool, crisp glass of Lanson Champagne, and best enjoyed while watching the SW19 action unfold on the Brasseries’ big screens.
