Recipe: The Pure Package Asian Style Duck Salad

  • 10ml Sesame oil
  • Thumb size piece of ginger, grated
  • 1 garlic, crushed
  • 1 lemongrass stick, finely chopped
  • 1 tsp Chinese five-spice
  • 2 duck legs
  • 40g thin rice noodles

For the dressing

  • 1 ½ tbsp tamari or soy sauce
  • 3 tbsp mirin
  • 1 tsp sesame oil
  • Juice of 1 lime
  • 1 long red chilli
  • Small knob of ginger, grated

For the salad

  • 1 small carrot, peeled and cut into thin batons
  • 30g mangetout, thinly sliced lengthways
  • 50g mooli, cut into thin batons
  • 1/4 cucumber, cut into thin batons
  • 2 spring onions, finely chopped
  • Handful of coriander, chopped 

To garnish

  • 2 tsp black sesame seeds
  • Pinch micro coriander
  • Pinch shiso cress


  1. Mix the sesame oil with the ginger, garlic, lemongrass and five-spice and rub it over the duck legs. Place on a baking tray and cover with foil. Leave to marinate for 6 hours.

  2. Roast the duck legs for 1 hour at 180°C until cooked through. Remove from the oven and allow to rest
    for 10 minutes.

  3. Meanwhile, cook the noodles according to the packet instructions and refresh in cold water. Combine the dressing ingredients.

  4. Remove the meat from the bone and shred it using a fork, discarding the skin, fat and bones. Spoon over all but 2 tablespoons of the dressing.

  5. Toss the shredded duck, noodles and salad ingredients together and pile into bowls. Drizzle over the remaining dressing. Sprinkle with sesame seeds, micro coriander and shiso cress and serve.
