Join Masterchef The Professionals chef Victor Okunowo for an AYO Collective supper club this Black History Month
As part of an array of events celebrating Black History Month, hotel and members club, Bingham Riverhouse, is welcoming African chef extraordinaire and ex MasterChef The Professionals semi-finalist, Victor Okunowo, to their stunning Richmond retreat. This ticketed dinner event will showcase the splendour and diversity in Pan-African cuisine. He’s teaming up with AYO Collective, a Pan-African gastronomic collective that he co-founded, that aims to introduce Pan-African gastro-culture to new audiences.
On Monday 10th October, Okunowo will take over Bingham’s beautiful restaurant with his AYO Collective chefs, to create a eight course tasting menu exploring their Pan-African heritage. A carefully crafted menu with bold and vibrant flavours and ingredients will bring the dishes to life. To go with the tasting menu will be a six wine pairing created by GQ Sommelier Of The Year 2022, Henna Zinzuwadia. A rising star within the industry, Zinzuwadia was previously a sommelier at award winning West African restaurant, Akoko, making her palate perfect for selecting wines to go with the menu. Quite the dream team.
Dishes include Yaji Beef Tartare, Moi Moi Souffle, Lemon Sole with smoked mussels and pumpkin, Confit Lamb Belly with sweet breads followed by Equiano Rum Soaked Fruit Cake and Guava and Long Pepper Pate De Fruit.
Born in Nigeria but raised in London, Chef Victor Okunowo spent years rising through the ranks of some of London’s best restaurants including Chiltern Firehouse and The Wolseley. He is famous for his spin on beautifully combining African and British cuisine using classical along with modern techniques to bring the presentation and combined flavours to life.
